My secret santa (Ellie, Joe's sister) got me the best present ever for Christmas--a subscription to Cook's Illustrated.  I've been wanting one for the past year, and Joe didn't even tell her.  Somehow she just knew.  (Maybe because last year I spent the entire Christmas day wrapped up in her copy.)  Last week my first issue arrived in the mail, and I immediately devoured it, reading the entire thing from cover to cover.  I love it.  The magazine really appeals to the perfectionist in me.  My left brain takes over when I do most things, especially cook, and Cook's Illustrated takes that same approach.  The recipes are created in a scientific manner, variations being judged by taste testers to determine the winning combination of ingredients and methods.  My favorite part is the explanation of why one thing works better than another.  And, dang, the recipes are delicious.  Pictured above are the molasses spice cookies I made from this recipe.  Yum.  Seriously, best present ever.

Great gift. I bake their mile-high buttermilk biscuits and they're really lofty and comforting. They do good analyses of things they tried that didn't work, and how the failures turned out, which is great for spotting where you've gone wrong with something. That kind of thing really teaches you about cooking, instead of just giving you a model to copy. David Rosengarten does something similar in his book 'Taste' where he gives you criteria (with photos!) for judging your results. Is this undercooked? Overcooked? How can I tell?

That's our favorite, too. We got their cook books as gifts last Christmas -- great staples to add to your collection!

I loved that magazine for years, then got tired of it. I wish I could start all over with it. ;)

Do you ever watch the show on PBS (America's Test Kitchen)? It's fun to see the testing in action!

Cheers,

I picked up the magazine for the first time this month, and it's great! I love the recipe and techniques for the thin crust pizza in this issue - it turns out perfectly every time.
